Kale is a veggie in the mustard family, and it can grow well in most conditions. But the biggest draw of kale is its nutritional value. One of the easiest kale recipes is a creamy kale soup recipe that you can make at home.
A creamy kale soup recipe is filled with simple ingredients and uses an Instant Pot to get you from start to finish quicker. Chilly fall evenings and cold winter days are perfect for a comforting soup recipe.
We could reach for a can of healthy soup, a mushroom soup, or a creamy cauliflower soup. Grab the can opener, pour it into a pot, and use a little bit of heat to enjoy.
There’s nothing wrong with how easy that process can be for home cooks. But canned soup loses much of the comfort you get from homemade soup. We could talk all day about nutritional information and the health value we get from soups.
However, you won’t find soup in a nutrition store. The real love of soup doesn’t focus on the health benefits. Instead, it stems from the comfort of a warm bowl of soup. Which begs the question, why involve kale at all?
Kale is an ingredient that people do enjoy for its nutritional value. We start to learn that finding things we love that can also keep us going as we get older is essential.
This creamy kale soup recipe will combine the comfort we want from a bowl of soup with the nutrition we know we need eventually. The next time you reach for a can of soup, consider making your own soup from scratch with this easy recipe.
This is the best soup recipe because you won’t need anything but the ingredients and an Instant Pot. No need to break out the stand blender or food processor or worry about medium-high heat or anything like that.
Just prep the ingredients, and the Instant Pot will do the heavy lifting.
Creamy Kale Soup Recipe
That’s right, this soup recipe with chopped kale is not just kale and broth. Sausage is another one of the main ingredients in this recipe. We use a mild ground sausage in this recipe.
However, you can heat things up by using spicy Italian sausage instead. Of course, this is not a sausage soup recipe; it is an Instant Pot kale soup recipe. But kale alone needs a little help in the flavor department.
You may be able to swap out the heavy cream for coconut milk, but you will lose a bit of that creaminess. You can also add other ingredients that you enjoy, like white beans, sweet potatoes, collard greens, or Swiss chard.
This creamy kale soup recipe uses curly kale, which is the most commonly found type in US grocery stores. There are different types of kale to consider, though, especially for growing your own.
You will find Scotch kale, redbor kale, winterbor kale, dwarf blue curled kale, and heirloom Siberian curly-leaf kale. There isn’t much difference between the flavors. However, the Scotch kale is a bit sweeter, and heirloom Siberian curly-leaf kale has a milder flavor.
You can use any type of kale in soups, like creamy kale soup or creamy potato kale soup. It really comes down to preference in appearance more so than flavor. Essentially, this means popping into the grocery store and grabbing whatever they have will do just fine.
There’s no need to spend hours searching for ingredients for gourmet soup recipes. We want something easy, delicious and doesn’t require a lot of skill. It is a great way to make new recipes on a cold day that the whole family will enjoy.
The ultra-creamy texture and the fresh herbs all make for a great soup that can definitely be a main course.

Set your Instant Pot to saute mode. Add the oil and Italian sausage. Brown the sausage for about 5 minutes, using a wooden spoon to break it up as it browns. Drain any excess fat.
While still in saute mode, add the garlic, onion, and oregano. Stir and cook for about 3 minutes until the onion is translucent.
Stir in the chicken broth, tomato paste, and cauliflower.
Place the lid on the Instant Pot and set the manual timer to 5 minutes.
When the cooking time is done, carefully do a quick release with the long end of a wooden spoon.

Remove the lid once more and stir in the heavy cream. Keep stirring until heated through, 1-2 minutes. Then season the soup with salt and pepper and stir it in.
