Whole30 Instant Pot Vegetable Soup with Beef Ingredients
You can make this as healthy as possible by using as many fresh ingredients as possible. In fact, that freshness will translate into flavor as well. There are some packaged ingredients on the list like diced tomatoes or the beef stock. Of course, you don’t need to make your own stock.
Just be sure that if you use any packaged ingredients you read the label first. You want to make sure there are no additives, and any canned or packaged ingredient is organic or grass-fed where possible. That means we want canned diced tomatoes without salt, and a healthy beef stock option.
The sirloin steak should be grass fed but that is just for the healthiest option, of course, it’s not required. The seasoning can be however you’d like. The seasonings will be the usual, salt and pepper, but also garlic powder, dried parsley, dried oregano, and dried basil.
Prep all the veggies and the beef. Set your Instant Pot to sauté and add the avocado oil.
Add the beef cubes and brown on all sides, about 5 minutes.
Add the onions, and celery and cook for another 3 minutes. Turn the Instant Pot to “off”.
Add all the remaining ingredients. Place and lock the lid on the Instant Pot. Make sure the pot is “sealed”. Set the manual time for 10 minutes.
Once the time is up, do a quick release of the Instant Pot. Remove the bay leaves and serve.

- 1 Tbsp Avocado Oil
- 2 Lbs Sirloin Steak Cut into small cubes
- 2 Small Sweet Potatoes Cut into cubes or diced
- 1 Cup Red Onion Diced
- 1-1 1/2 Cups Celery Sliced
- 2 14.5 Oz Cans of Diced Tomatoes No salt
- 4 Cups Beef Stock Approximately 1 carton
- 1 tsp Salt
- 1 tsp Pepper
- 1/2 tsp Garlic Powder
- 1 tsp Dried Parsley
- 2 Bay Leaves
- 1 tsp Dried Basil
- 1 tsp Dried Oregano
