Pork chops are delicate in that they can easily become tough and dry. This problem is clearly due to overcooking, so why do people most often encounter it with Instant Pot pork chops? The answer is the steam release.
It is important to release the steam as soon as the cook time is up. This will help prevent overcooking, which is the leading cause of wasted pork chops.

Whole30 Pork Chops Ingredients
- Boneless Pork Chops | We can’t make a delicious Whole30 Instant Pot pork chop recipe without pork chops.
- Avocado Oil | We want to sear the outside of these chops before we cook them through.
- Chicken Stock | Instant Pots cook with a combination of heat, steam, and pressure. We use the chicken stock to create the steam without drying out the pork chops.
- Salt | Gordon Ramsey would hate us if we didn’t season our food during the cooking process.
- Parsley | Parsley is an herb that adds a bit of flavor to the pork chops, but it is a small cog.
- Black Pepper | Another cog in the flavor machine is pepper; again, we fear Gordon Ramsey.
- Dill | This herb adds a bit more flavor to the chops than parsley. The dish will be delicious with this one-two punch.
- Garlic Powder | Most of the flavor will come from this. This seasoning is like adding a bow to the perfectly wrapped gift.
- Onion Powder | The last bit of seasoning just brings everything together with a mild, yet flavorful sweetness.

Instant Pot Pork Chops Recipe
- Combine the parsley, dill, garlic powder, and onion powder in a bowl. Set Aside.
- Rinse and pat the pork chops dry with a paper towel. Season with salt and pepper.

- Heat the oil, butter, or ghee in the Instant Pot on the saute setting. Then brown the chops on both sides, about 1 minute per side.
- Set the chops on a plate.

- Add the stock to the Instant Pot, then use a wooden spoon to loosen any browned bits from the pot. Then turn off the Instant Pot.
- Place the trivet in the pot.

- Coat the chops in the spice mixture and then place them on the trivet.
- Over the Instant Pot. Seal the vent and set to cook on high pressure, or manual, for 7 minutes.

- Once the cook time is done, let the pressure release naturally for 10 minutes. Then release the seal.
- Let the chops rest for a few minutes before slicing and serving.
- Be sure to pour some of the juices over the pork chops for more flavor.
