It can take a bit of work to make a good soup. You could absolutely use just chicken, broth, and some sliced veggies and call it a day. But we want something healthier, tastier, and easy to enjoy. However, you will need a few more items for those types of results. We are going to start with avocado oil for sautéing the veggies.

Carrots, celery stalks, onions, garlic, and zucchini will be great, healthy additions. Then we need some seasoning like thyme, salt, pepper, smoked paprika, and a couple of bay leaves. Together, these all come together in this Whole30 Instant Pot chicken and veggies soup.

Directions

Use the sauté setting to sauté the onion, garlic, and carrots in avocado oil for about 5 minutes or until tender.

Seal and set for 20 minutes cook time. The chicken should be tender and fall apart easily with a fork.

Prepare your zucchini noodles. If they are fresh, you may need to sauté them for a few minutes in a medium pan with a little water to soften them to your taste.

Remove the cooked chicken from the pot and place in a large bowl.  Shred the chicken with 2 forks and place back into the soup.

Place zucchini noodles in each serving bowl and spoon soup over the noodles when you are ready to serve.

  • Sliced Green Onion and Fresh Parsley For Garnish
