Whole30 Instant Pot Beef Stew Recipe
You can’t make a recipe without the ingredients. Of course, a stew requires slightly more ingredients than most other recipes.
Luckily, this is a Whole30 Instant Pot beef stew recipe. That means most of the ingredients will just be tossed into an Instant Pot.
There are some ingredients that will require a tiny bit more effort like the beef stew meat. But the beef stock, kale, celery, mushrooms, carrots, onions, and garlic will just be chopped and sliced and then tossed in.
How to Make Instant Pot Beef Stew
In a mixing bowl, combine the Arrowroot powder, salt, and pepper. Then add the beef chunks and dredge them in the powder combination.
Heat the oil in your Instant Pot on “sauté”. Then carefully add the beef, not letting the pieces touch each other. Brown for 3-5 minutes on each side. Remove the beef to a plate and set aside. TIP: You will likely have to work in batches depending on the size of your Instant Pot. It’s important to give the beef a little room between pieces for even cooking. Add a little more oil each time you change batches.
Pour one cup of the beef broth into the hot Instant Pot and scrape with a spatula to pick up the tasty, browned bits.
Place the browned beef along with the rest of the ingredients into your Instant Pot.
Place the cover on the slow cooker and lock. Set at high pressure for 30 minutes.
When the cooking time has finished, let the Instant Pot release naturally for 15 minutes. Then carefully “quick release” the remaining pressure. There should not be much.
Before serving be sure to remove the bay leaves and taste one more time to adjust seasonings if necessary.

Ingredients
- 2 Lbs Lean Beef Stew Meat Cut into 1-inch cubes
- 2 tsp Arrowroot Powder
- 2 Tbsp Avocado Oil Or more if working in batches
- 1/2 Cup Tomato Paste
- 4 Cups Organic Beef Stock Or broth
- 1 Cup Kale Sliced in thin ribbons
- 1 Cup Sliced Mushrooms
- 1 Medium Turnip Cut into cubes
- 3 Celery Stalks Sliced
- 1 Cup Carrots Sliced
- 2 Cloves of Garlic Minced
- 1 Medium Onion Chopped
- 1 Tbsp Dried Thyme
- 1 Tbsp Dried Parsley
- 2 Bay Leaves
- Salt and Pepper To taste
Instructions
